The recipe was taken from Great British Chefs – they have lots of other ideas to deal with seasonal fruit gluts!
Ingredients
- 8 plums
- 4 tablespoons fruit juice (e.g passion, mango or a juice of your choice)
- 1/2 teaspoon of cinnamon
- 30g butter, diced
- 2 tsp sugar
Method
- Preheat oven to 190ºC/gas mark 5
- Cut the plums in half and remove the stones. Place the plums skin side down in an ovenproof dish and drizzle with the fruit juice
- Sprinkle the cinnamon, butter and sugar on top and bake in the oven for 10 minutes
- Remove plums from the oven and baste with the juices in the dish
- Serve with custard, creme fraiche, greek yoghurt or vanilla icecream. Also delicious on their own
