Ingredients
  • 800 g ripe bananas - the brown spotting skin stage works well
  • 1 medium onion
  • 350 ml white wine vinegar or cider vinegar
  • Juice of 1 lemon
  • 150 g sugar
  • 1/2 teaspoon of salt
  • 1 tablespoon Curry Powder
  • 1/4 teaspoon ground ginger
Method
  1. Chop the onion into small dice and roughly chop bananas
  2. Heat the bananas, lemon juice, vinegar and onions in a pan, bring to boil then lower heat and simmer for 30 minutes
  3. Add the sugar, curry powder, ginger and salt and cook for a further 10 - 20 minutes
  4. Transfer into sterilised jars or containers
