Ingredients
1 tbsp oil (olive is suggested)
1 clove garlic, chopped
1 x 400g chopped tomatoes, passata or tomato juice
1 tbsp tomato puree (if using tomato juice)
1 tsp dried oregano or 1 tbsp of fresh oregano
1 tsp sugar
Salt and pepper to taste
Method
Heat 1 tbsp oil in a pan on medium heat. Add chopped garlic and fry for a minute.
Before garlic starts to brown add chopped tomatoes (or passata or tomato juice)
Stir in the oregano, sugar and salt/pepper to taste
Bring to boil and then gently simmer for at least 15 mins. If using tomato juice, turn up the heat to a gentle boil for a few minutes to reduce to desired thickness before the final simmer.
